As it turns out, diamonds are excellent conductors of heat and produce an indestructible cooking surface that releases easily without the use of fats, doesn't peel or crack, and is even safe for the dishwasher and for use with metal utensils.

This 10-inch covered pan fries about four strips of bacon; sauts a bunch of scallions in butter; or, with the lid on, braises kale or collard greens. Beneath the diamond crystals, the pan is constructed of heavy cast aluminum, which is also a consistent heat conductor and has an extra-thick base that resists warping and is safe for any type of cooktop. The comfortable ergonomically designed handle and knob on the lid stay cool during cooking and are oven-safe to 500 degrees Fahrenheit. The tempered glass lid is clear to prevent overcooking and has reinforced stainless-steel rims for added durability. A sliding lever in the knob opens for optional venting.
